This dish is thought to have been invented in the 13th century Levant region. The maqlubah-flip became a TikTok sensation during the pandemic and continues to be popular today. With al-Khalil (Hebron) in Palestine claiming ownership of the dish, it is traditionally made with lamb or chicken, fried or roasted vegetables, and rice cooked together in a pot and then flipped into a large serving dish.
