Knafeh

A delicate crust of shredded phyllo dough, molten ooey-gooey cheese, orange blossom water scented sugar syrup, fresh ground pistachio, and loads of grass-fed butter and ghee come together in an unforgettable Eastern Mediterranean dessert known as knafeh. Come learn to make Director of Program Awad Awad’s Palestinian version of the dish.

Kleicha

The Iraqi national cookie, called kleicha, is a lovely marriage between a Fig Newton and Rugelach on a honeymoon in Iraq after a short trip to India. You heard that right. Yummy pastry dough infused with cumin and cardamom hugs the filling of dates, cardamom, and fennel. Join Arabic and Cooking Instructor Zainab Hashem as she makes the most interesting cookie in the world.

Koshary

Comfort food is a dish that takes you nostalgically down memory lane to happier times, filling your belly while giving you a lovely warm, heartfelt bear hug. One of the comfort food dishes is koshary. Join Arabic and Cooking instructor Nelly Shalaby in making this iconic Egyptian dish made of macaroni, rice, lentils, chickpeas, fried onions, and a fantastic sauce.
