Aleppo has a special place in the heart of world chefs as a popular food destination well before Paris was on the culinary map. At the crossroads of several continents and a significant stop on ancient trade routes including the Silk Road; Allepian chefs took the best of intercontinental ingredients, cuisines, and techniques and made them their own. Kabab bil-karaz, or meatballs in sour cherry sauce, is best when made with a specific regional cherry known as Wishnah or Washnah and is a quintessential savory, sweet, and sour dish that makes our mouths water just by writing the description.
